Semi ripe mangoes are perfect for chutney preparation. This delicious recipe contains many beneficial spices which improves body’s immune system. Mango Chutney is one of my favorite mango delicacies. In this recipe I have not made paste of any spice, used only whole or cut form which produced a different taste. But you can use them in powder form or paste form.
Ingredients:
- Semi ripe mango 2 cups
- Mustard seeds 1 teaspoon
- Cumin seeds half teaspoon
- Nigel seeds half teaspoon
- Cloves 2-3 nos.
- Cardamom 2-3 nos.
- Cinnamon small stick
- Bay leaf 1 no.
- Chopped ginger garlic 1 teaspoon
- Fennel seeds half teaspoon
- Grated jaggery 4 tablespoon or as per preference
- Green chillies (8-9nos. or as per preference)(optional)
- Turmeric powder one and half teaspoon
- Salt as per taste
- Cooking oil 3 tablespoon
