I love to use seasonal fruits and vegetables for my daily platter. Early summer is the time for raw mango. It is tangy but I love the sour taste. Raw mango rice is my second dish of raw mango in 2020. First time I prepared simple raw mango dal (lentil) using mustard seeds only instead of panch phoran during masala fry (phoran).

Raw mango rice is a south Indian delicacy. But I added some variations to it.

Ingredients:

1. Rice 150gm

2. Raw mango 2 nos.

3. Grated coconut 2 cups

4. Jaggery 3 tablespoon or as preferred

5. White sesame seeds 2 tablespoon

6. Curry leaves total 20-25nos. For preparing garam masala mix keep 12-15nos. Rest use for adding to masala paste later on

7. Garam masala mix: Cardamom 4-5nos., cinnamon 1 small strand, clove 5-6nos., black pepper 9-10nos., curry leaves 12-15nos.

8. Mustard seeds 2 teaspoon

9. Chana/urad dal 2 teaspoon

10. Handful of peanuts

11. Cumin-coriander powder mix 1 teaspoon

12. One garlic clove and small piece of ginger

13. Green chillies 5-6nos.

14. Bay leaf 1no.

15. Salt as per requirement

16. Turmeric powder 2 teaspoon or as preferred

17. Oil 5 tablespoon or may be slightly increased

Take two raw mangoes to make two cups of grated mango
Grate two mangoes
Grate coconut (two cups)
Roast peanuts. Divide in 3/4 and 1/4 part. 3/4th of roasted peanuts to be added to for making masala paste. 1/4th of roasted peanuts to be added during cooking masala paste later on
Take six green chillies (or as preferred).
Take one garlic clove and a small ginger piece (optional) (blend)
Take 3 tablespoon jaggery (to reduce sourness)
Roast Garam masala ingredients ( 4-5 cardamom, 5-6 cloves, small piece of cinnamon, 9-10 black pepper, 12-15 curry leaves) and then grind them
Roast white sesame seeds
Make paste of roasted peanuts (3/4th of total roasted peanuts), grated coconut,(3/4th of total quantity), white sesame seeds, green chillies, jaggery
Blend raw grated mango and grated toconut (1/4th of total quantity)
Heat oil and then add Chana dal
Add mustard seeds. Let them crackle
Add bay leaf (tej patta)
Add one green green chilli (you can add dry red chilli also)
Add 10-12 curry leaves and one teaspoon ginger garlic paste
Add garam masala mix
Add masala paste
Add raw mango-coconut paste
Add turmeric powder, salt as per taste, roasted peanuts (15-20 ) and cumin-coriander powder
Keep stiring in low flame
Mix cooked masala with precooked rice (make sure rice is not overcooked) gently using hand or by spoon and serve with curd or papad
