Mango is my favourite summer fruit. Ripe mango is usually sweet though the sweetness varies from variety to variety. Pancakes from mango is very simple and delicious. Only one thing to remember: Please prepare the batter carefully. Don’t add water to the batter as that will cause difficulty while flipping the pancake.

Ingredients:

  1. Ripe mango 3nos.
  2. All purpose flour 150gm
  3. Sugar 4-5 tablespoon. Grind and make it evenly thin powder (4 tablespoon or as preferred)
  4. Cashewnut 75-80gm
  5. Baking powder 1 teaspoon
  6. Milk powder 4 tablespoon or as preferred
  7. Ghee 1 teaspoon
  8. Oil as required (approx. slightly less than 1 teaspoon for each pancake)
  9. Honey as per preference
  10. Butter as per preference (optional)
1. Take 3 ripe mangoes. Rinse thoroughly in water
2. Cut the mangoes in pieces after peeling off the skin. Blend the pieces to have thick consistency
3. Take 150gm all purpose flour (maida)
4. Mix mango pulp and flour well
5. Add 4 tablespoon of sugar powder (can be adjusted as per preference)
6. Mix flour-pulp-powdered sugar and you will find consistency is reduced as the sugar gets dissolved in the mixture
7. Roast cashew nuts (approx. 75-80gm) in 1 teaspoon of ghee
8. Add 1 teaspoon of baking powder
9. Add milk powder (4 tablespoon) and pieces of roasted cashewnuts
10. Mix all the ingredients finally
11. Pour 1 teaspoon of cooking oil on a hot pan. Add little quantity of batter (approx. 2 tablespoon). Don’t pour too much batter on pan as you don’t want the pancake remain undercooked inside
12. Flip the batter when one side is slightly cooked to avoid burning/blackishness
13. Stack 4-5 pancakes. Pour honey as much as you want. You can add little bit of butter if you want. Devour delicious nutty mango pancake hot!
